What is the best way to transfer all files and settings from Windows 8 to Windows 7?

Hi everyone

I am migrating from a laptop running Windows 8 to another using Windows 7 as I don't like the new operating system. I have tried using Windows Easy Transfer to move the files and settings but it isn't working, which I guess I should expect as the host and target OS are different.

I want to copy all documents, email settings, music, wifi settings etc. across - what is the best way to do this?
